Green (unroasted) coffee should be kept dry, at room temperature. Coffee does not begin the complex process of exchanging carbon dioxide for oxygen (the process that stales roasted coffee), until it is roasted...So properly stored, green coffee has a shelf life of eighteen months. All prices listed below are for one pound (16 oz./ 454g.) packages.
